Texture-Tek freeze-dried lactic cultures are a series of cultures supporting the Cheese-Tek range. These cultures are composed of strains producing EPS (exopolysaccharides). They can develop a complementary structure in fresh and soft cheeses for the personalization of the product according to the wishes of the cheesemaker.
